Palm Coast recently welcomed its first Jimmy John's restaurant. The store — which is located at 50 Plaza Drive, Unit 105 — opened its doors to the public on Dec. 18, according to owner Linda Judd.
Restaurant hours are 10 a.m. to 10 p.m.
Linda co-owns the restaurant with her husband, John, and her son, Daniel. John handles financial work, Linda is responsible for marketing and worked with the contractor to get the store built, and Daniel is the operations manager.
Daniel has worked for Jimmy John's for 14 years. He spent 12 years as a general manager at a Jimmy John's in Michigan.
"It's a lot of work, but we're a close family," Linda said. "It's a great challenge. Each one of us brings something new to the team. It's a team effort, and we're all working together."
