Ed and Grace Tutak hope to be in business by Race Week.

The vacancy left by Best Bagels & Deli in Palm Coast Plaza could soon be filled by a new restaurant, according to the property management company.

Rob Robinson, of Commercial World Real Estate, confirmed that the property management company received a business plan and financial statements submitted Tuesday morning by Ed and Grace Tutak, who hope to open their restaurant, Say Grace Bagels and Deli.

“I’m not saying that there is a lease ready, but I’m saying from our point of view, (the Tutaks) qualify to be a very good tenant,” Robinson said Tuesday.

As of 4 p.m. Tuesday, Robinson couldn’t confirm a deal was done, but he said a lease agreement could be reached as early as the end of the day.

“The timeline (for a lease agreement) is from (Tuesday afternoon) to the next couple of days,” he said.

Ed Tutak said Tuesday that the goal would be to open the restaurant by race week, which takes place mid-February.

Because the Tutaks frequented the previous restaurant, they developed friendships with employees. They hope to rehire some of the employees who worked at the previous deli.

Owning a restaurant has been a lifelong family dream, Grace Tutak said.

“I’m looking for it to be a real family-friendly place where people can come and meet, even if you’re not hungry,” she said. “An extension of my home.”

Ed Tutak added: “We want to make sure we bring back the same flavor of the place.”

A meeting was scheduled to take place between the Tutaks and the property manager Wednesday afternoon.

Ed Tutak said equipping the restaurant was a larger financial hurdle than originally planned, and would be the main obstacle in reaching an agreement.
