What's on tap at Fletcher's?
If you're seeking local brews, on average, the longstanding Ormond Beach restaurant offers anywhere from 18 to 22 of their own craft beers. All brewed just a few feet away from the bar, as owner Bill Fletcher relocated brewing operations to his Ormond location at 393 W. Granada Blvd. in December 2025. The change came as his lease for his Holly Hill restaurant was up and he was ready for a new evolution.
Which includes a new name: Fletcher's Irish Brewery & Scratch Kitchen. It's part of a campaign to make people aware of what Fletcher's offers, said Fletcher.
"We're not just an Irish pub," he said. "We're not just a great kitchen. We're brewing really fantastic beer."
Bringing Fletcher's brewery operations to its Ormond Beach location was an easy transition, Fletcher said. Finding the space was one of the initial challenges, but the 5,000-square-foot restaurant had some extra space in the front near the bar.
So it's been a good fit, Fletcher said. In total, he estimates they offer over 60 beers on their menu, including guest brands.
Fletcher's began brewing beers about five years ago when it opened its Holly Hill location. The decision to close that restaurant came as a result of rising costs for business owners and a desire to consolidate operations to his home turf.
"It was more of, 'We have a fantastic brand. Instead of stretching my time over two locations, let's focus on one and make that one a rock star,'" Fletcher said.
Three years ago, Fletcher hired Robre Shash to be his brewmaster. Since moving, Shash said he feels the Ormond customers to be more receptive to craft beer.
Which is a good thing, because an average brew day takes him about seven hours.
"For the most part, I develop the recipes," Shash said. "Bill certainly gives me suggestions on something he might like to see, and then he lets me figure out how to make that happen."
Shash started as a home brewer 27 years ago. When he was hired at Fletcher's, he developed all new recipes for the restaurant.
Fletcher's offers everything from IPAs to stouts, as well as specialty beers, like its "I can't believe it's not butter" beer and upcoming blackberry cobbler sour.
"I'm passionate about beer and I get pretty intense about presentation and the different qualities that make it up," Shash said. "I want it to be perfect from when I make it to when the customer gets it in front of them."
Since consolidating, Fletcher said beer production is up about 30%. The response from customers has been positive and Fletcher's is selling more of their own beer compared to the guest taps.
That being said, if people want a Guinness, they can get one at Fletcher's too.
"I think we sell more Guinness than anybody else in Volusia County," he said.
The restaurant industry is hard, Fletcher said. Prior to becoming a business owner, he worked in IT. A lot of what he learned in business, he did so through the "school of hard knocks," he said.
His business has become a family operation — one that's open seven days a week from 11:30 a.m. to 2 a.m. His wife works at Fletcher's. So do his two sons and his daughter. It's family-friendly, Fletcher said.
Fletcher's will be celebrating its 20th anniversary next year. The business started as a cigar bar and evolved into an Irish pub. It moved to its current location in 2017.
"Even though we're still considered a pub or a bar in most eyes, we do sell more than alcohol and beer," Fletcher said. "Our kitchen's probably about 90% scratch."
